I had a ton of leftover brown rice from Chinese takeout and my mother’s voice was in my head, “Don’t waste fooooood!” So, what to do? Get creative! I threw these together and was happily surprised with the result. So tasty and easy to make.

Spinach Rice Balls

1 1/3 cups rice (I used the leftover delivery brown rice)
1/2 an onion, finely chopped
1/2 package frozen chopped spinach, about 3/4 cup
2/3 cup shredded parmesan
2 eggs
salt and pepper

1. Preheat oven to 375 degrees. Heat a pan with a little olive oil and sautee the onion until wilted. Add the spinach until defrosted and heated through.

2. Put the spinach and onion mixture in a bowl. Add rice and parmesan and stir together. Add the eggs, salt and pepper to taste, and mix well. The mixture will be relatively wet.

3. Roll the mixture into about walnut size balls and place on cookie sheet. Bake in the oven for about 15 minutes. The bottoms should just start to brown when ready.

Serve with marinara sauce for a wonderful finger-food appetizer or snack, or as a side dish for your favorite meals. Enjoy!
